- 3 eggs, Dollop of butter, Creme fraiche (optional), salt & pepper, chives for garnish
- Crack 3 eggs in a saucepan.
- Add a dollop of butter into it.
- Put the pan over medium heat and keep mixing with a spatula.
- Keep removing the saucepan off the heat occasionally without forgetting to stir the mixture.
- When the mixture begins to curdle, add half a teaspoon of creme fraiche to it.
- Season with salt and pepper.
- Garnish with chives and serve with tomatoes and mushrooms roasted in olive oil.

For the hollandaise sauce (You can use store-bought sauce as well)
- Melt 250 gm of butter
- Separate the whites from two eggs and cook the yolks using a double boiler. Keep whisking continuously

- Slowly add the melted butter and whisk
- Store in a thermos to stop it from curdling

- Add the poached eggs on it
- Douse with hollandaise sauce and serve

- Dice up the boiled eggs

- Crack open and whisk an egg
- Add some half and half to the egg and whisk again
- Soak your bread slices in the mixture
- Butter and heat up a pan
- Toast the soaked bread slice in the pan (pour any remaining mixture over the bread slices)
- Flip to cook both sides
- Whisk the half and half to form fresh cream or use store-bought cream
